@julien_cadeau Ce soir, je vous emmène dans le vieux Nice avec une délicieuse Socca !! Qui en veut ? Ingrédients - 150g de farine de pois chiches - 175g d’eau - 40g d’huile d’olive - 4g de sel - 2g de poivre noir - 10g huile d’olive + 10g huile végétale pour la cuisson - 1 pincée de fleur de sel Steps ️ 1. Torréfiez le poivre noir dans la crêpière à feu doux puis broyez-le au mortier 2. Dans un saladier, mélangez la farine de pois chiches, le sel et le poivre 3. Délayez avec l’eau tout en mélangeant avec le fouet 4. Ajoutez l’huile d’olive et fouettez une dernière fois pour obtenir une préparation homogène 5. Recouvrir avec un torchon ou un couvercle et laissez reposer pendant 2h à température ambiante minimum (sinon toute la nuit au frigo) 6. Dans une crêpière à feu fort, versez le mélange d’huile d’olive / végétale (ça évitera à l’huile d’olive de brûler) 7. Versez 1,5 à 2 louches de préparation dans la crêpière (les quantités dépendent de la taille de votre louche / diamètre de la crêpière). 8. Répartissez la préparation sur 2 à 3mm d’épaisseur 9. Lorsque la première face de la socca est bien dorée, retournez-la pour faire de même avec l’autre face 10. Add the buckwheat flour and salt, then stir into a smooth batter. Separate the egg, add the yolk to the batter and keep the white aside. Cover the bowl with plastic foil and let the batter rise for 45 minutes in a warm spot. Whisk the egg white until stiff and gently fold it into the batter. Heat a pan over medium heat and lightly grease it. Spoon small amounts of batter into the pan and cook the blinis for 1–2 minutes per side until golden and fluffy. Serve warm with sour cream and salmon, or a sweet topping of your choice.

@benrebuck Latkes these crispy potato pancakes are one of the best bits about Chanukkah for me and are really easy to make vegan. In fact, so easy you’d be a fool not to make them. You need: 3 medium potatoes (makes 6-8 latkes) 1 white onion 1/2 cup flour 1tsp salt Oil for frying For the sour cream and chive dip: 300g silken tofu 1tbsp apple cider or white wine vinegar 1tbsp lemon juice 1tsp salt Handful chopped chives -Grate up a handful of potatoes -Add to a bowl with some water and rinse them to remove the starch, making sure to keep the starch for the dish (it will gather at the bottom of the water so drain slowly) -Rinse out as much water from the potatoes as possible -Grate some onion and add to the potatoes with the flour, seasoning and the potato starch -Combine until they become ‘sticky’ and then form into patties (if you need them to be more sticky, add a bit more flour) -Fry in hot oil until golden brown (about 3 minutes on each side) -you can also air fry them as I know you will ask - I sprayed them with a lot of oil and they took about 20/25 minutes but would recommend being unhealthy for these -make your sour cream by blending the ingredients and adding the chopped chives at the end -tuck in and enjoy this festive Chanukkah treat x #jewish #Chanukah #Hanukkah #Hanukah #vegan #plantbased #veganfood #vegetarian #jewishfood #Latkes #latke #potato #chanukkah ♬ original sound - Ben Rebuck
@andy_cooks Dosa with Aloo Masala and Tomato Chutney Ingredients Dosa - 240g (1¼ cups) basmati rice - 125g (¾ cup) urad dal (split black gram) - 80g (½ cup) chana dal (split chickpeas) - 20g (4 tsp) fenugreek seeds - 1 tsp salt Tomato Chutney - 3 tbsp oil - 1 tsp black mustard seeds - 1 tbsp urad dal - 1 tsp cumin seeds - 1 small red onion, diced - 6 cloves garlic, peeled and crushed - 1 thumb-sized piece ginger, peeled and sliced - 2 small green chillies - 12 curry leaves - 4 tomatoes, diced - 1½ tbsp tamarind paste - salt, to taste Aloo Masala (Potato Filling) - 2 tbsp oil - 1 small red onion, diced - 1 tsp cumin seeds - 3 cloves garlic, finely grated - 8 curry leaves, sliced - 2 small green chillies, sliced - 14 cooked baby potatoes, lightly mashed - ½ tsp ground turmeric - salt, to taste Method Make the Dosa Batter: 1. In a large bowl, combine the rice, urad dal, chana dal, and fenugreek seeds. Rinse under cold water twice, then cover with water and let soak at room temperature for 4 hours. 2. Drain and place the soaked rice and lentils into a blender, adding half of the soaking water. Blend until mostly smooth, aiming for a slightly gritty, fine texture. Transfer to a bowl, mix gently with your hand, then cover with a lid and a tea towel. Leave in a warm spot to ferment for 10 hours. Prep the Tomato Chutney: 1. Heat the oil in a pot over medium-high heat. Add the mustard seeds, cumin seeds, and urad dal, toasting for 1–2 minutes until aromatic. Add the diced onion, ginger, garlic, green chillies, curry leaves, and a pinch of salt. Stir well and cook until the onions soften slightly. 2. Stir in the tomatoes, tamarind paste, and about 200ml (¾ cup) of water. Cover and cook for 35–40 minutes, until the tomatoes, onions, and garlic break down fully. Allow to cool slightly, then blend until smooth. Adjust seasoning if needed, and keep at room temperature until serving. Make the Aloo Masala (Potato Filling): 1. In a pan over medium-high heat, heat the oil and add the diced onion, cumin seeds, and garlic. Sauté for 2 minutes until fragrant, then add the curry leaves and sliced green chillies. 2. Add the lightly mashed baby potatoes, turmeric, and salt. Mix well and set aside to cool to room temperature. Prep and Cook the Dosa: 1. Once the dosa batter has fermented, stir in the salt and mix again by hand. If the batter feels too thick, add a little water until it reaches the consistency of pouring cream. 2. Preheat a large cast-iron pan over high heat for 5–6 minutes. Splash a little water on the pan; it should sizzle immediately. Pour a ladleful of batter onto the pan and spread it in a circular motion to create a thin, even layer. 3. After 1–2 minutes, when the dosa begins to brown on the bottom, drizzle a small amount of oil around the edges. Place a portion of the aloo masala in the centre, then fold three edges over to form a triangle. 4.
